- 1/2 cup (1 stick) of Unsalted Butter
- 1/2 cup of White Sugar
- 1/2 cup of Brown Sugar
- 1 tsp Vanilla
- 1 large Egg
- 1.5 cups of All Purpose Flour (I use this kind)
- 1/2 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Mini Chocolate Chips
- Preheat the oven to 375 degrees F.
- Mix together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl place the butter, white sugar and brown sugar.
- Using either a stand mixer or a hand mixer cream the butter and sugars together on low speed for 3 minutes.
- Stop the mixer and scrape the sides of the bowl.
- Add in the egg and vanilla extract.
- Continue to cream/mix together for 7 more minutes (this is key!).
- The resulting mixture should be light and fluffy.
- Add in the dry ingredients that were mixed earlier and on low/stir speed, mix together until just combined, usually no more than 30 seconds.
- After the dough has come together, using a rubber spatula fold in the chocolate chips.
- Using a cookie scoop, scoop out the dough onto a greased baking sheet, placing no less than 1 inch apart to allow for the cookies to expand as they’re baking.
- Bake for 8-10 minutes.
- Take the cookies out of the oven, even if they don’t look completely finished yet, and let them rest on the baking sheet for 2 additional minutes.
- Move to a cooling rack.
- Serve warm and enjoy!!! 🙂
