2 small Beets
3/4 cup Feta Cheese, crumbled
1 clove Garlic
1/2 cup Raw Cashews
2 tbsp Lemon Juice
1.5 tbsp Olive Oil
3/4 cup Water
1/2 tsp Salt
1/4 tsp Black Pepper

Instructions

Cook pasta according to package instructions
Chop the greens off the beets, and wash.
Chop the beets into quarters (4 pieces) and put into boiling water and boil until tender, roughly 45 minutes.
After beets have cooked and cooled off, put them and the remaining ingredients into a blender and blend until smooth.
Pour the sauce over the pasta, stir, and enjoy!
