Chickpea Corn Salad

Chickpea Corn Salad in blue bowl

This salad is one of my favorite ones to make, and I’ve been making it during the summer for years!

It’s the most simple, quick salad ever, so it will be ready in no time!

I choose to not put any meat in it, however if you choose to eat meat roasted chicken would be amazing!

I always use fresh, romaine lettuce, but spinach is also a good substitute.

All you have to do is chop the lettuce up (if you don’t buy the pre-chopped, packaged lettuce (I don’t), open a can of chickpeas, open a can of corn, throw some cheese in, and done!

This salad is pretty filling, so many times I’ve had only this for a meal.

I used to eat it without any dressing, but have recently found that it pairs really well with my Green Goddess salad dressing!

Ingredients

Scale
  • 1 head Romaine Lettuce I use whole leaf lettuce, not pre-chopped, packaged.
  • 1 can (15 0z) Chickpeas
  • 1 can (15 oz) Sweet Kernal Corn
  • 1/2 cup Shredded Parmesean Cheese

Instructions

  1. Chop Romaine lettuce, place in large bowl
  2. Drain and rinse the can of chickpeas and the can of corn, place in bowl with lettuce
  3. Add parmesean cheese
  4. Toss all ingredients together and enjoy!

Notes

Other ingredients that taste good with this salad are tomatoes, cucumbers, roasted chicken, and/or avocado!

 

Use with my Green Goddess salad dressing, or enjoy plain!
