Healthier Taco Bell Inspired Mexican Pizza

This Taco Bell Inspired Mexican Pizza is definitely a healthier upgrade to the classic Mexican pizza at Taco Bell.

Taco Bell pizza was one of my favorites when I was a kid. I was raised in a very health eating house, so I was only allowed to have it every so often and it was always a treat.

I haven’t had it since I was young, but since it’s been in the news recently as it’s making a comeback, I thought I would make my version of it. Since I don’t eat meat anymore, I made my own version of their seasoned ground beef, you can find the recipe here. Full disclaimer, I haven’t had red meat or Taco Bell food in many years (even decades?) and since I’m unwilling to taste test it I don’t really remember what the original tastes like. This is based off of my memory and other ones that I have tried. So that being said, this recipe is INSPIRED by Taco Bell, it’s not necessarily a “copy-cat” version of their’s.

What’s Inside Taco Bell Inspired Mexican Pizza?

  • Tortillas– I am gluten free, so I use these. They are amazing!
  • Vegetarian “Beef” or regular beef
  • Refried Beans
  • Cilantro
  • Fresh Tomatoes
  • Mexican Cheese
  • Sour Cream
  • Jalapeño

How to Make:

  • If you are going to be making your own ground “beef” start here. If you are not a vegetarian feel free to use real beef. If you are a vegetarian/vegan and want to make my version, you can find it here.
  • When the “beef”/beef is made, go ahead and dice the tomato and chop the jalapeño and cilantro.
  • When everything is ready, start by placing the bottom tortilla on a plate.
  • Cover the tortilla with refried beans, leaving about 1/4 of an inch of space on the edges.
  • Layer the beans with the “beef”/beef.
  • Sprinkle some of the Mexican cheese on top.
  • Place the top tortilla on top.
  • Spread sour cream on top.
  • Sprinkle with desired amount of cheese.
  • Place the diced tomatoes on top of the cheese.
  • Finish by placing the jalapeños on top of everything.
  • In a skillet that has been heated over medium-high heat, place fully assembled pizza inside and cover with lid.
  • Cook until bottom of the tortilla has browned and the cheese on top has melted. This took me about 3-5 minutes, but depending on your stove it could vary.
  • Place pizza onto plate, sprinkle some fresh cilantro on top, cut into 4 pieces and enjoy!!

Ingredients

  • 2 Tortillas– I use these since I’m gluten free and they are amazing!
  • Either Vegetarian “Beef” or regular ground beef (see note)
  • Refried Beans
  • Tomatoes, diced
  • Cilantro, roughly chopped
  • Jalapeno, chopped
  • Sour Cream
  • Mexican Cheese

Instructions

  1. If you are going to make your own vegetarian “beef” the recipe is here. If you are not vegetarian regular beef works too. 
  2. When the beef/”beef” is finished, go ahead and dice the tomato, chop the cilantro and jalapeño.
  3. Start to assemble the pizza- on a plate place the bottom tortilla.
  4. Spread desired amount of refried beans on bottom tortilla. Keep a 1/4 inch space for the edge.
  5. Spread the beef/”beef” on top of that.
  6. Sprinkle some cheese on top.
  7. Place the top tortilla on top.
  8. Spread some sour cream on top of the top tortilla.
  9. Sprinkle some cheese on top of the sour cream.
  10. Place desired amount of diced tomatoes on top of the cheese.
  11. Top it all off with the chopped jalapeño.
  12. In a skillet heated to medium-high place the fully assembled pizza inside and cover.
  13. Cook until the bottom of the tortilla has browned and the cheese on top has fully melted, about 3-5 minutes for me, but times may vary.
  14. When finished cooking, sprinkle some fresh cilantro on top and enjoy!

Notes

Since I’m a vegetarian I don’t eat beef so I decided to make my own seasoned ground “beef” recipe using tofu! The recipe can be found here, or you can use regular beef if you eat it.
