Sweet Greens Salad

While living in Boston I really enjoyed eating at Sweetgreen. Their kale caesar salad was one of my favorites. After I moved to Kentucky, where there are no Sweetgreen’s, I realized that I had to make a copycat sweetgreen kale caesar salad so I could enjoy it every time I wanted.

This recipe turned out really good! I like to make a large bowl of it so I can enjoy it throughout the week.

I hope you enjoy this as much as I do!

What’s Inside?

  • Romane Lettuce
  • Spinach
  • Baby Kale
  • Cilantro
  • Tomatoes
  • Cucumbers
  • Hard Boiled Egg
  • Parmesan
  • Caesar Dressing

How to make:

  • I used bagged baby kale and spinach, I put a couple of handfuls each in a large bowl.
  • Chop up cilantro and place in bowl with kale and spinach.
  • Chop up tomato and put in bowl.
  • Cut up hard boiled egg and put in bowl.
  • Chop up mini cucumbers and put in the bowl.
  • If making homemade parmesan crisps go ahead and put those in the oven.
  • Toss all of the ingredients together in a large bowl.
  • When ready to eat, place in an individual bowl and pour dressing on top.
  • Enjoy!

Ingredients

Scale
  • 2 handfuls Baby Kale
  • 2 handfuls Spinach
  • 1/2 handful Cilantro
  • 1/2 Medium Tomato
  • 3 Small, Mini, Persian Cucumbers
  • 1 Hard Boiled Egg
  • 3/4 cup Parmesan Cheese
  • Caesar Dressing

Instructions

  1. Measure and place the kale (I used the baby kale in a bag from TJ’s) and the spinach in a large salad bowl.
  2. Coarsely chop the cilantro and place in bowl.
  3. Chop the tomato and the cucumber and place in the bowl.
  4. Chop up the hard boiled egg and place in the bowl.
  5. If using homemade parmesan crisps, preheat oven to 400 degrees F., spread evenly onto a baking sheet and bake for 4-6 minutes or until the edges have turned slight golden brown and the middle is bubbling. 
  6. Wait for the crisps to cool, and then tear them up and put them in the bowl with the rest of the ingredients.
  7. Toss all ingredients together.
  8. When you’re ready to eat, put an individual amount in a small bowl, pour your choice of caesar dressing on top (I used Trader Joe’s brand), and enjoy!
 

Notes

I don’t really measure any of the ingredients when I make a salad, I usually just put however much of an ingredient I want. Feel free to use more or less of the measurements here.
