This Vegetarian Caesar Salad is made without the use of fish in the dressing, and with chickpeas instead of croutons. Perfect for gluten-free people and vegetarians!

Caesar salads are so quick, easy, and simple to make. Very few ingredients (if any) to chop up, this salad comes together in a matter of minutes!

I was vegetarian for about 8 years. Even though I don’t label myself as a strict vegetarian anymore, I still prefer to eat caesar dressing without fish as an ingredient.

  • Chickpeas are a good source of calcium.
  • Chickpeas may help lower your LDL.
  • Chickpeas contain choline and may be beneficial to your nervous system.
  • Romaine Lettuce contains calcium.
  • Romaine Lettuce has lots of antioxidants.
  • Romaine Lettuce contains Vitamin C and is good for the immune system.

What’s Inside Vegetarian Caesar Salad:

  • Romaine Lettuce (either a whole head or prepackaged, pre-cut)
  • Chickpeas
  • Parmesan Cheese
  • Black Pepper
  • Lemon Juice
  • Dijon Mustard
  • Garlic
  • Olive Oil
  • Capers
  • Mayo
  • Salt

How to Make Vegetarian Caesar Salad:

  • Roughly chop up the lettuce, unless using pre-packaged that’s already chopped.
  • Blend all of the dressing ingredients in a blender on low speed until smooth.
  • Place all of the ingredients into a large bowl.
  • Toss and enjoy!

A vegetarian version of a classic

Ingredients

Units Scale

For the Salad-

  • 1 head of Romaine Lettuce
  • 1 15oz can of Chickpeas
  • Black Pepper, to taste
  • Parmesan Cheese, to taste

For Dressing-

  • Juice of 1 Lemon
  • 1 tbsp Dijon Mustard
  • 1 clove of Garlic
  • 1.5 tbsp Olive Oil
  • 1 tsp Capers
  • 1/3 cup of Mayo
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

For the Salad-

  1. Roughly chop the Romaine Lettuce unless you’re using pre-packaged/cut.
  2. Place all of the salad ingredients (lettuce, chickpeas, parmesan cheese and black pepper) into a large salad bowl

For the Dressing-

  1. Put all of the dressing ingredients into a blender and blend until smooth.

Assembly-

  1. Place all of the salad ingredients into a bowl
  2. Pour the dressing on top
  3. Toss, and enjoy!

Notes

If you want your dressing to be a little more zesty, add in 1/2 tbsp extra Dijon Mustard!
